lal Bhopla / Red pumpkin is considered as a poor mans source of carotene. Rich in minerals and vitamins pumpkin is an ideal vegetable for kids and making sweet puris with pumpkin is the best way to make this boring vegetable appetizing.
Easy and quickly make pumpkin sabji.

Ingredients:


  • 1/2 kg Pumpkin, peeled and diced
  • 1 tbsp red chili powder
  • 1 tbsp Goda masala
  • 1 tbsp grated jaggery
  • Salt to taste
  • Chopped coriander Leaves


For Tempering: 

  • 2 tbsp oil, 
  • 1 Tbsp mustard seeds, 
  • 1/4 tbsp cumin seeds, 
  • pinch of hing, 
  • 1/4 tbsp turmeric powder, 
  • 7-8 Curry Leaves

Method:
 1) Heat 2 tbsp oil in a pan. Add mustard seeds,Curry Leaves, cumin seeds, hing, turmeric powder. Add diced pumpkin. Mix well.



 2) Add red chili powder,Goda masala,salt,grated jaggery Mix well.



 3) Cover the pan and cook over medium-low heat,Stir occasionally 
 4) Add 1/4 cup Watar and cover the pan again.



 5) Once the pumpkin is almost cooked, Garnish with chopped coriander Leaves, serve with wheat chapati.
