Ingredients:
1)500 gms chana dal (Split Bengal gram)2)500 gms jaggery - Grated or coarsely chopped
3)1 tsp Cardamom Powder
4)1 Tbsp Nutmeg Powder
5)1 Tbsp turmeric Powder
6)150 ml Oil
7)Pinch of Salt
8)Ghee to serve
For making dough:
1)2 Cups Wheat Flour
2)1 tsp Salt
3)2 Tbsp Ghee
4)1 Cup Water
5)1 Cup Rice Flour
Method :
Puran Stuffing :
1) Soak the dal for 2-3 hour and pressure cook it with a pinch of salt & turmeric Powder till (7 to 8 whistles) it is completely cooked and soft.
2) Drain the water and mash it coarsely.
3) Now take a kadai or non stick pan pour the mashed dal and add jaggery. Mix it thoroughly and cook slowly.
4) Add Cardamom powder and grated nutmeg to it and mix thoroughly.
5)cook on low heat till it becomes dry completely. It should form into a stiff non-sticky mixture. With this your Puran(stuffing) is ready
outer covering :
1)Take Wheat Flour in a bowl.add 1/2 tbsp salt , and oil.mix it well
2)The dough should be similar to chapati dough but just a little more softer and loose.
Now Puran Poli Recipe :
1) Make flat balls out of the dough like we make for chapatis/Parathas.
2) Dust it using Rice flour and roll it in round shape with a roller.
3) Roll out the dough into a small circle, place the puran in centre and cover from all sides. Roll out the poli gently and dry roast on a tawa or pan.
4) Cook on both sides on medium heat till it turns a slight golden brown and is cooked well.
5) Puran poli is ready to eat. Serve it hot with some more ghee poured over or warm milk.
Tip :
1) you may be use 1cup maida & 2 cup Wheat flour insted of 500 gms wheat flour.
