लाल माठाची भाजी / Red Leafy Vegetable | Lal Math Bhaji / Red Amaranth leaves sabji, aka red spinach, is turned into a delicious easy to prepare dish in Goa, which is better known locally as Lal bhaji. The preparation for this completely vegan nutritious Indian dish won't take you more then 15 minutes! 


Ingredients

3 cups Red Amaranth Leaves (Red Leafy Vegetable) tightly packed
4 cloves Garlic finely chopped
2 Green Chillies finely chopped
1/2 teaspoon Cumin seeds
2 teaspoons Cooking oil
Salt to taste


Method :
1) To begin making the LaL Math Bhaji Recipe (Goan Style Red Amaranth Stir Fry), clean wash and chop the red amaranth leaves /Red Leafy Vegetable roughly and keep aside.
2) Heat oil in a pan, add the cumin seeds  let it splutter
3)Add the garlic cloves and saute for a minute.
4)Add the chopped  green chillies and saute 
5)Add the chopped amaranth/Red Leafy Vegetable season with salt and let it cook. This will tale around 5 minutes.
6)Once the water is all dried out, sabji mix well and switch off the heat.
