Ingredients:
• 1 bowl cracked emmer wheat.
• 1 bowl Gudh / Jaggery
• 1 tbsp Chopped Almonds
• 1 tbsp Chopped Cashew nuts
• 1 tbsp Raisins
• 4 tsp Ghee / Clarified butter
• 4 Cup Water
• 1/2 tsp Cardamom powder
• Milk
Method :
1) Take 1 bowl of cracked emmer wheat. Soak it in water for over night.
2)We will pressure cook wheat in a pressure cooker.
Add water till it reaches the level of wheat and rice.Pressure cook for 6-7 whistles on medium flame.
3) You can beat wheat with masher or ravi.
4) after mash add Jaggery in cooked wheat and mix it well.
5)In a pan, heat 4 tbsp ghee and fry cashew nuts,Almonds until they turn brown in color.Now fry raisins until they puff in size.
6)In the same pan, add mixture of wheat & jaggery and let it melt completely.
7)after melthing jaggery add Cardamom powder and mix well
8)Take the some cooked wheat & jaggary mixter out into a blender jar and blend these smoothly.
9)Add the blended wheat and mix well.When you blend wheat in blender it becomes sticky so some water in it.and mix well.
10)Consistency of Kheer should be thick.and our Base for kheer is ready.
11)Now add milk.Be careful with the temperature of milk. If you want to serve hot kheer then add hot milk to hot kheer ,Add a little hot milk at a time and mix.
12 cook it for 2-4 minuts ,our Wheat Kheer is ready to eat.
